Questa "finta sfoglia" è una versione facilitata per la preparazione della pasta sfoglia. La vidi per la prima volta sul blog di Araba Felice, da allora non l'ho più lasciata.
L'ho più volte riproposto nelle mie ricete, qui sul blog, ma non le ho mai dedicato un post ad hoc.
La semplificazione consiste nel preparare una ricetta che non richieda la sfogliatura dell'impasto con tanti giri di pieghe ed altrettante spennellature di burro, risultando così più leggera e più rapida da preparare.

- 250gr di formaggio spalmabile tipo Philadelphia
- 250gr di farina
- 160gr di burro tirato fuori dal frigo mezz'ora prima di impastare
- 2 cucchiai rasi di zucchero (da omettere per preparazioni salate)
- un pizzico di sale
Mescolare sommariamente impastando con le dita il
burro e il formaggio spalmabile: dovrete ottenere un composto non del
tutto omogeneo.
Unite quindi farina e zucchero, sempre sommariamente, ottenendo un composto a grosse briciole.
Senza impastarlo, ponetelo in frigo per tutta la notte, o per alcune ore.

Trascorso il tempo, tiratelo fuori dal frigo, stendetelo in un rettangolo e fate un giro di pieghe a tre.
Stendete col mattarello ed è pronto all'uso che volete.
